Now, I promised I wouldn't reveal which city their site is in but they gave me permission to reveal the business niche, and it's one I never thought of:
Catering Halls!
This makes perfect sense... A single wedding can make thousands of dollars for these businesses, a much higher customer value than diners or even higher class restaurants.
As a rule of thumb, the higher the customer value of your clients - the more that client can pay to acquire that customer.

Pro-Tip: The more you specialize, the more you can charge.
Like the example above, catering halls are a sub niche of restaurants with a higher customer value and will pay more for the same service...
Specialists like allergists or cardiologists make more per patient than general practitioners and will pay more to get each patient...
Exotic car and rim shops have a higher customer value than your mom and pop mechanic shops...
This list can go on forever. Just remember, the more specific you are, the fewer clients you will need to work with... And the more money you can charge per client.
